banana and nutella muffins

These delicious banana, walnut and nutella muffins are made with spelt flour, which although is not gluten-free, is easier then wheat to digest.

Full recipe after the jump:-

260g spelt flour
1tsp baking powder
1tsp bicarbonate soda
3 large bananas (mashed)
80g caster sugar
80g soft brown sugar
1 egg
60ml sunflower oil
1tsp vanilla essence  
40g walnuts
nutella approximantly 2 large tsb

  1. Heat your oven to 180
  2. mix all the dry ingredients together (flour, baking powder, bicarb, sugar, walnuts) and in a separate bowl mix together all the wet ingredients (banana, oil, vanilla, egg)
  3. combine the dry and wet ingredients together
  4. spoon the mixture into muffin cases, then put a blob of nutella into each muffin.  
  5. bake for about 15-20mins 
best served warm
