pistachio and almond cookies

These biscuits are perfect with a cup of tea. Plus they're quick and easy to bake.

They're are slightly pasty looking, so some green food colouring might be a good idea, to give them a pastel hue. 

Recipe under the cut:- 
makes 12 large biscuits 
Ingredients: 
140g margarine 
100g caster sugar
60g  ground almonds 
210g plain flour 
1 egg (whipped)
1 teaspoon vanilla paste 
a handful of pistachio nuts 
green food colouring (optional)

Instructions 
preheat oven to 180

mix the margarine and sugar until creamy. (add in food colouring if desired) 

add in the ground almonds and stir until well combined. Add in plain flour, and vanilla. your mixture should now resemble dough, if it seems to be too dry (mine was) add in the egg until the mixture is a thick springy dough. 

using your hand make small balls, add pistachio nuts to these balls as you go and reshape. I put 4-5 nuts in per biscuit. 

place on a baking tray and bake for 10-12 mins. 

Enjoy with a cup of English breakfast tea.
